I needed an alternative to boring day-after-day green drinks to get in my daily nutrition from vegetables. I’m not much of a cook. I’m also not a big fan of soup and never formally learned to make them, not even out of a cook book. Due for a grocery shopping trip with only a few ingredients left in the fridge, I gave this a try. It is super healthy (all ingredients are organic) and it is remarkably tasty! I just had to share my recipe.
Serves 1
1 handful of Power Greens
(comes in a bag, contains chard, baby kale and baby spinach)
1 handful of Mixed Bean Sprouts
chicken bouillon
(I used 1.5 teaspoons of organic “Better Than Bouillon” in 400 ml water)
a few sprigs of curly parsley
1 clove garlic, chopped
Throw the greens and sprouts into a small pot. In a measuring jug, dissolve the bouillon in kettle-boiled water and pour into the pot. Press down the greens and sprouts with a spoon till they are mostly under the water. Cover pot. Bring to a boil on medium-low heat, add the garlic, stir and lower heat to a simmer till greens are softened.
That’s it! Simple, quick and yummy!
